Vegan Orange Cranberry Muffins

When we asked what you guys wanted our blog to consist of, a bunch of you said that you wanted to see some recipes on here. Now you might not see our super popular desserts and treats, a magician never reveals their secrets after all, but we are going to try and give you some of our tasty recipes to try out in your own kitchen!

For us this is a favourite muffin. Filled with citrus and bold flavours. You guys love it in store so we wanted to share it with you so you can make it at home! This recipe can be found here on our blog, or in the September/October issue of "What's On Chilliwack Magazine".
 
If you don't want to go through all of the steps of making the recipe, you can stop by the café and pick up our muffin mix and just add the oranges, the cranberries and the wet ingredients.
 
We obviously recommend using the SaraBella's flour blend, it is what we have discovered to work the best, and let's be real: we have spent almost 8 years developing our flour recipe so we believe in it and use it for everything we make in store.
 
While this recipe has a few things that aren't vegan, like butter and buttermilk you can easily use vegan butter and soy buttermilk to make the recipe vegan. To make your own buttermilk (regular or vegan) just take one cup of your chosen milk, add a tablespoon of lemon juice, and then let it sit for 5 minutes.
 

Dry Ingredients:

2 1/2 cups SaraBella's Gluten Free Flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
 

Wet Ingredients:

2 flax eggs (2 tablespoons ground flax meal, 6 tablespoons water)
1/2 cup butter, melted
1/2 cup vegetable oil
1 cup buttermilk (or soy buttermilk)
1 teaspoon vanilla
Grated zest of half an orange
Juice from half an orange
1 1/2 cups cranberries

Directions: 

Mix together dry ingredients in one large bowl, set aside. 
Mix together wet ingredients in a separate bowl.
Add wet ingredients to dry ingredients, mix well.
Fill muffin tins 3/4 full. 
Bake at 325°F for 25-30 minutes, or until a toothpick comes out clean.
